These delicious snowballs are packed full of goodness and a favourite in our household. Free of refined sugar and loaded with healthy fats as well as collagen, these are a great option when you feel like a decadent treat.
Ingredients:
- 1 3/4 cups unsweetened shredded coconut
- 3 tsp coconut oil
- 2 tbls rice malt syrup or maple syrup
- 2 tbls unsweetened coconut milk
- 3 tbls Simply Collagen PURE
- 1/2 tsp vanilla extract
- pinch salt
- organic dark chocolate (melted)
Directions:
- Place 1 cup shredded coconut and 3 tsp coconut oil into the bowl of a food processor. Process on high speed, scraping down the sides every once in a while.
- Add the rice malt syrup, coconut milk, Simply Collagen, vanilla extract, salt and then process on high speed until all of the ingredients have combined.
- Add 3/4 cup of additional shredded coconut and process on high speed until all of the ingredients have combined and formed a batter.
- Shape the coconut mixture into balls and coat. Refrigerate for at last an hour and dip in the melted chocolate.
